Tilapia Ceviche
What you will need (will make about 6 servings)
- 5 - 6 tilapia fillets, finely chopped**
- 1 cup of lime juice (about 8 limes)
- 1 large tomato seeded and chopped
- 1/2 cucumber seeded and chopped
- 1/2 large onion finely chopped (I used a white onion)
- 1/4 cup of fresh cilantro leaves chopped
- 1/2 cup of orange juice (optional)
- 1/2 jalapeno finely chopped
- Salt and pepper
- Con Limon seasoning (optional)
- Tostadas
- Mayo (for spreading, trust me)
- 1 avocado, halved, pitted, peeled and sliced
Directions
- Put tilapia in bowl or flat baking dish. Pour the lime juice over the fish and mix gently to combine. Make sure all the fish is submerged in lime juice.
- Cover with plastic wrap or foil and let sit in refrigerator until the fish is white throughout. I usually let me soak for about 1 hour.
- While fish is in the refrigerator chop all of you vegetables.
- After fish is cooked drain off the lime juice, rinse with orange juice if using, then gently squeeze the fish with your hand removing any excess liquid.
- Add fish to tomato, cucumber, onion, cilantro mixture.
- Season with salt, pepper and con lemon to taste
- Spread tostadas with layer of mayo. I know it sounds odd but it add a richness to the dish. Top with ceviche. Arrange the avocado slices on top of ceviche, add a couple of dashes of hot sauce.
- ENJOY!!
**Note: To cleanly chop your fish it works better if it is partially frozen and you use a very sharp knife.
